Abstract: El presente trabajo de investigación titulado “Efecto de tipos de secado del cacao (Theobroma cacao L) CCN-51 en la preservación de polifenoles totales y antocianinas”, se desarrolló en el laboratorio de investigación – UNSM, las mazorcas fueron obtenidas del fundo Pampa Verde ubicado en el distrito de Cacatachi, provincia de San Martin, la operación de quiebre de las mazorcas se realizaron en las instalaciones de la planta piloto de la UNSM, los granos en baba se colocaron en los cajones de fermentación por siete días, luego de los cuales fueron sometidos al proceso de secado (directo al sol, bajo techo transparente y en estufa), hasta alcanzar una humedad de 7.4%. Las muestras de cacao fresco en baba presentaron las siguientes características fisicoquímicas: Humedad: 52,85%, Grasa: 41,92%, proteínas: 13,28%, polifenoles totales: 14,75g EAG/100g, antocianinas: 5,31mg cianidina-3-glucósido/g. Los objetivos fueron: cuantificar el contenido de polifenoles totales y antocianinas en los tres tipos de secado. Para el análisis de las muestras se preparó un extracto hidroalcohólico que consistió en pesar 3.0 g de cacao en 25 mL (agua/etanol 50:50v/v), macerado por 24 h, y la extracción fue asistida por ultrasonido. Para esto se utilizó un diseño completo al azar (DCA) con arreglo factorial (3x3), y la prueba de Tukey (p<0,05), para ello se utilizó el paquete estadístico Infostad versión estudiantil. Los resultados obtenidos en la presente investigación, se encontraron diferencias significativas en los tres tipos de secado. Los granos de cacao CCN-51 secados en estufa presentaron mayor contenido de polifenoles totales con 8,03 g EAG/100g y el menor fue del secado bajo techo transparente con 6.76 g EAG/100g. El mayor contenido de antocianinas en granos de cacao CCN-51 secados en estufa fue 2,31mg cianidina-3-glucósido/g y el menor en secado bajo techo transparente con 2,01 mg cianidina-3-glucósido/g The present investigation work titled Effect of drying types of cocoa (Theobroma cacao L) CCN-51 on the preservation of total polyphenols and anthocyanins, was developed in the laboratory of research - UNSM, the cobs were obtained of the Pampa Verde country in Cacatachi district, San Martin province, the operation of the break down corn cobs was realized in the pilot plant of the UNSM, the grain in baba were placed in the drawers of fermentation for seven days, were subjected to a drying process by three types of drying (Direct drying in the sun, transparent roof and stove) to reach humidity between 7.4%. Fresh cocoa samples in mucilage have the following physical-chemical characteristics: Moisture: 52,85%, 41,92%, protein: 13,28%, total polyphenols: 14,74g EAG/100g, anthocyanins: 5,30mg cyanidin-3-glucoside/g. The objectives were: to quantify the content of total polyphenols and anthocyanins using three types of drying. For the analysis of the samples, it was prepared a hydroalcoholic extract which consisted to weight 3.0g of cocoa in 25 mL (water/ethanol 50:50v/v), macerated for 24 hours, and the removal was assisted by ultrasound. For this we used a design using the Complete Design fate (DCA) with factorial resolve (3x3), and the Tukey test (p<0.05), for this we using the student version Infostad statistical package. The results obtained in the present investigation, were found significant differences in the three types of drying. The cocoa beans CCN-51 dried in stove presented greater total polyphenol content with EAG 8,03 g/100g and the minor was the solar drying with EAG 6,76 g/100g. The highest content of anthocyanins in cocoa beans CCN-51 dried in stove was 2,31mg cyanidin-3-glucoside/g and the lowest in solar drying with 2,01 mg cyanidin-3-glucoside/g.
