Abstract: El presente trabajo de investigación tiene por objetivo general es elaborar el manual de Análisis de Peligros y Puntos Críticos de Control (HACCP) en el Camal Municipal de Yurimaguas, para el aseguramiento de la calidad e inocuidad en la línea de beneficio de ganado vacuno. Esta investigación se realizó tomando como base legal las normas vigentes en el Perú como son: el Decreto Supremo Nº007–98–SA: “Reglamento sobre Vigilancia y Control Sanitario de Alimentos y Bebidas”, la Guía de Aplicación de Sistema HACCP – SENASA y el Decreto Supremo N°015–2012–AG: “Reglamento Sanitario del Faenado de Animales de Abasto”, emitido por la Autoridad Nacional en Sanidad Agraria – SENASA. Se realizó un diagnóstico sanitario inicial el cual se basó en la evaluación de una Lista de Verificación (Chek List.) propuesta en los “Lineamientos para la Aplicación de Medidas Sanitarias de Seguridad en Establecimientos Procesadores de Carnes, Productos y Sub Productos Cárnicos – SENASA”, con el fin de evaluar el nivel de cumplimiento y aplicación del Reglamento Sanitario del Faenado de Animales de Abasto. El resultado obtenido del diagnóstico inicial determinó un cumplimiento del 38.3% de los requisitos evaluados, resultado que exige al Camal Municipal tomar acciones inmediatas para mejorar las condiciones sanitarias del producto. La base principal del plan HACCP son los programas prerrequisito de Buenas Prácticas de Faenado y los Procedimientos Operativos Estandarizados de Saneamiento. El plan HACCP consiste en 12 pasos y 7 principios los cuales aseguran un proceso inocuo y de calidad. Se identificaron 3 puntos críticos de control, en la Inspección Sanitaria Ante-Mortem, Evisceración y en el Lavado de medias carcasas. Finalmente se diseñaron los procedimientos y registros que mediante el monitoreo permitan realizar una revisión periódica del sistema.
The main objective of this research is to elaborate the handbook of Hazard Analysis and Critical Control Points (HACCP) in the Municipal slaughterhouse of Yurimaguas, for the assurance of quality and safety in the line of benefit of cattle. This investigation was carried out taking as legal basis the norms in force in Peru such as: Supreme Decree Nº007-98-SA: "Regulation on Health Surveillance and Control of Foods and Beverages", the HACCP System Application Guide - SENASA and the Supreme Decree No. 015-2012-AG: "Sanitary Regulation of the Animals labor and supply”, issued by the National Authority in Agrarian Health - SENASA. An initial health diagnosis was made based on the evaluation of a Check List proposed in the “Guidelines for the Application of Sanitary Security Measures in Establishments Processors of Meat, Products and Sub products Meat – SENASA”, With the purpose of evaluating the level of compliance and application of the Sanitary Regulation of Animal Supply. The result obtained from the initial diagnosis determined compliance with 38.3% of the evaluated requirements, a result that requires the Municipal Camal to take immediate action to improve the sanitary conditions of the product. The main basis of the HACCP plan is the prerequisite programs of Good Handling Practices and the Standardized Sanitation Operating Procedures. The HACCP plan consists of 12 steps and 7 principles which ensure a safe and quality process. Three critical control points were identified in the Ante-Mortem Sanitary Inspection, Evisceration and in the Washing of half shells. Finally, the procedures and records were designed that, through monitoring, allow a periodic review of the system.
