Abstract: Uno de los problemas de gran impacto ambiental es la acumulación de los residuos sólidos provenientes de empaques alimentarios, lo que ha impulsado a la búsqueda de biopolímeros naturales y renovables. La torta de Sacha Inchic (Plukenetia volubilis) subproducto agroindustrial generado en la extracción de aceite es una alternativa para la elaboración de películas por su alto contenido de proteínas. Así mismo, el alcohol de polivinilo (PVOH) es capaz de formar películas transparentes con adecuadas propiedades. El objetivo de la presente investigación fue estudiar el efecto de la adición del alcohol de polivinilo sobre las propiedades físico-mecánicas de biopelículas compuestas por Aislado proteico de Sacha Inchic. Las biopelículas fueron obtenidas por el método de casting, para obtener espesor constante se utilizó 7% de macromoléculas en la solución filmogénica. La determinación de las propiedades mecánicas fue realizada con un Texturómetro Brookfield Model CT3 50k. Para evaluar la influencia de la adición PVOH se planteó un diseño completo al azar con cinco tratamientos, siendo la variable independiente el porcentaje de adición de PVOH, en los niveles, 0, 3, 6, 9, 12 % p/p, realizándose los ensayos por triplicado. El resultado indicó que el espesor, como se pretendió, no fue influenciado (P >0,05) por la adición de PVOH, además de la humedad, solubilidad y color. A mayor concentración de PVOH se obtuvo un incremento en el porcentaje de elongación (de 9,497 ± 0,777% a 27,063 ± 2,975%), fuerza de perforación (de 6,017 ± 0.764 N a 13,617 ± 1,199 N) y por consiguiente menor módulo de Young (de 51,304 ± 12,693 N/mm2 a 15,799 ± 1,177 N/mm2). Las películas con mayor contenido de PVOH (12%) presentaron mejores propiedades de barrera (2,918 ± 9,281*10-12 g m-1 s-1 Pa-1).
One of the problems of great environmental impact is the accumulation of solid waste resulting from food packaging, which has led to the search for natural and renewable biopolymers. The Sacha Inchic cake (Plukenetia volubilis), an agro-industrial by-product generated in the extraction of oil, is an alternative for the production of films because of its high protein content. Likewise, polyvinyl alcohol (PVOH) is able to form transparent films with adequate properties. The objective of this research was to study the effect of the addition of polyvinyl alcohol on the physical-mechanical properties of biofilms composed by Sacha Inchic's protein isolate. The biofilms were obtained by the casting method, to obtain constant thickness, 7% of macromolecules in the filmogenic solution were used. The determination of the mechanical properties was done with a Brookfield Model CT3 50k Texturometer. To evaluate the influence of PVOH addition, a complete randomized design with five treatments was proposed, being the independent variable the percentage of PVOH addition, in the levels, 0, 3, 6, 9, 12% w/w, performing the tests in triplicate. The result indicated that the thickness, as it was intended, was not influenced (P >0.05) by the addition of PVOH, besides the humidity, solubility and color. The higher the PVOH concentration, there was an increase in the elongation percentage (from 9,497 ± 0,777% to 27,063 ± 2,975%), drilling force (from 6,017 ± 0.764 N to 13,617 ± 1,199 N) and consequently lower Young's modulus (from 51,304 ± 12,693 N/mm2 to 15,799 ± 1,177 N/mm2). Films with higher PVOH content (12%) had better barrier properties (2,918 ± 9,281*10-12 g m-1 s-1 Pa-1).
